Questions

I have two questions I'd like to ask before character creation: first of all, what weapon would a Scythe be classified as? Assault Spear or Battleaxe, or would that be something to put in the suggestions as a locked skill? Second, when I create my character, have it accepted and start roleplaying, would I be able to roleplay having my character test out a few different weapons before settling only on one?

None in regards to your first question. Scythe is not an option among the weapons used in SAO, sorry. As for the second question, I suppose you could rp testing the different weapons out in a single thread, no more than that, though you should have the one you're actually going to be using in your journal already as that is part of the rules.

I just remembered something else I was going to ask if I couldn't use a scythe: could I eventually get a trident as a weapon in the Assault Spear category, or at least a weapon styled like a trident?

I would assume so. The appearance isn't really an issue since it still counts as a polearm weapon (spear).
